Mac and Cheese with Hot Italian Sausage

Ingredients:
- 8 oz elbow macaroni (or other pasta)
- 3 tbsp butter
- 3 tbsp flour
- 1/2 tsp salt
- fresh ground black pepper to taste
- 1-1/2 cups milk
- 6 oz (about 1.5 cups) grated sharp cheddar cheese (divided)
- 3 links hot Italian sausage (either turkey or regular)
- 2 tbsp bread crumbs (or crumbled potato chips)
Instructions:
- Preheat oven to 350 degrees F.
- Cook the pasta according to directions until it is al dente. Drain and set aside.
- Remove the casing from the sausage, crumble, and brown. Drain any fat. Set aside.
- Melt butter and remove from heat
- Stir in flour and seasonings
- Gradually add milk, stirring until well mixed
- Cook over low heat, stirring constantly until thickened and smooth
- Cook for 5 minutes longer, then add 4 oz (one cup) of the cheese and stir util smooth and welll blended
- Add the cooked sausage and mix thoroughly
- Grease a 8 x 8 square pan and add the pasta. Pour in the cheese sause and mix thoroughly.
- Top with the remaining cheese and sprinkle with bread crumbs.
- Bake for 30 minutes, then remove and let stand 10 minutes before serving.
Notes:
You can try to make this with sweet Italian sausage as well.
Omit the sausage for standard Mac and Cheese
